5ml. Cointreau
5ml. Orancio
5ml. Antica Formula

Stir & well chill all ingredients, repeat chilling (do not shake). Strain into a chilled cocktail glass and garnish with a stemmed cocktail cherry.

Brazilian Mule

50ml. Beija-Flor Cachaça Velha
50ml. fresh apple juice
juice of 1 lime
10ml vanilla syrup
3 dashes of Angostura bitters
ginger beer

Shake all ingredients with ice & strain over ice, top up with ginger beer. Garnish with apple fan dusted with cinnamon.

5ml. gomme ayrup
Dash Peychauds Bitters

Rinse old fashioned glass with Jagermeister. Stir ingredients and serve without ice. Garnish with a lemon zest.

45ml. Beija-Flor Cachaça Velha
To make the meringue:
white of two eggs
7 bar spoons caster sugar
pinch crème de tartar (thickening agent)
40ml. fresh lime juice

Add all ingredients to a mixing glass with spring from a hawthorn strainer dry shake until thick. Take a chilled shot glass and half fill with chilled Beija-Flor Cachaça Velha layer meringue on top, serve with a lime praline on the side.

12.5ml. lemon Juice
50ml. pear pure
8 basil leaves

50ml. Beija-Flor Cachaça Velha
8 lime wedges (1 lime)
25ml. rose hip syrup
50ml. pink grapefruit juice

Muddle lime in glass (strong), add cubed ice and other ingredients. Stir. Garnish with a long thin grapefruit wedge.

Original Caipirinha

50ml. Beija-Flor Cachaça
4 lime wedges
2 tsp. of sugar.

Muddle lime and sugar, add Beija-Flor Cachaça & ice and stir well.
Pour into a rocks glass.
